<p>A rare culinary gem has just arrived to Aria Mixai: <strong><em>Piedmont White Truffle!</em><br />
</strong>This superior White truffle is atypical, found only during October thru December. It cannot be cultivated &amp; is found only in specific geographic areas.<span id="more-1035"></span><br />
This particular truffle&#8217;s scent is very aromatic; even small quantities will perfume any dish making it a tantalizing gourmet treat!<br />
The White Truffle (tuber magnatum pico) is found only in North &amp; Central Italy. Slight quantities have been harvested in the former Yugoslavia.  Currently, there have been tentative attempts in Australia &amp; America to cultivate the truffle by recreating its natural environment &#8211; attempts so far have been unsuccessful.</p>

<p>Recently, since Autumn in Italy was preceded by a dry summer, commencement of the white truffle search was made quite difficult. Truffle Hunters (“Trifulau”) &amp; their specially trained dogs were required to explore higher on the hills to find the moist soil adequate for truffles. Sadly, very few quantities were harvested this year, but what was found is now prized &amp; cherished as an epicurean treasure for our most knowledgeable &amp; discerning diners!</p>
